Iván Gerardo Solís Rivera has over 20 years of experience in coffee growing, processing, and quality control. After founding Café Solis & Cordero in 2018, he established their own dry mill to support smallholders in Costa Rica’s Santos region. His micromill offers services like cherry processing, quality control, and export. In this Raisin Honey process, cherries are washed, fermented for 72 hours, dried on raised beds, pulped, and then dried again for 14 days.
